What sets Improved Helenor apart is its responsiveness to cool-season growing, plant it right and it delivers roots with genuinely exceptional flavor, far superior to spring-sown crops that often turn woody. The variety needs just 6 inches of space to size up properly, making it efficient for home gardens, and the 85-day timeline means you can count on a fall harvest window that aligns with cooler weather when the roots develop their characteristic mildness and smooth texture.
Improved Helenor rutabagas are at their best roasted, peel and cut them into chunks, toss with olive oil, and roast until the edges caramelize and the interior becomes tender and sweet. They're also excellent in soups, stews, and root vegetable medleys, or simply steamed and served with butter. Harvest them young, when roots reach about tennis ball size, for the most tender eating quality.
Sow seeds directly outdoors in midsummer in well-drained garden soil in full sun. Sow seeds 2 inches apart and 1/2 inch deep in rows 12 inches apart. For spring sowing, plant as soon as soil can be worked, though fall planting yields superior results.
Harvest Improved Helenor when roots reach about tennis ball size, pulling or digging them out carefully from the soil. Roots harvested at this stage deliver the best texture and flavor, larger roots risk becoming fibrous, especially if spring-planted. In cold-winter regions, you can time your midsummer planting so the crop matures as temperatures cool, extending the harvest window into fall.
