Specialty Onion
Cipollini onions are Italian heirloom bulbs prized for their distinctive flat shape and complex flavor profile that balances spice with nutty undertones. These intermediate-day onions mature in about 120 days and produce bulbs weighing 4 to 6 ounces with a striking contrast between their brownish-yellow exterior skin and creamy white flesh. What sets them apart is their impressive storage longevity, properly cured cipollinis can last 3 to 5 months in cool conditions, and their ability to braid beautifully, making them as handsome hanging in your kitchen as they are on your plate.

Cipollinis are a gardener's reward for patience. These Italian favorites offer something most onion varieties don't: a genuinely spicy yet nutty aroma that develops as they cure, plus the durability to store through winter without refrigeration. The bulbs' unusual flat profile and attractive coloring make them ornamental in their own right, and they braid naturally, transforming your harvest into functional kitchen décor. With intermediate-day requirements and 120 days to maturity, they're accessible to most growing zones while delivering a genuinely distinctive flavor and impressive shelf life.
Cipollinis shine in Italian cooking where their spicy-nutty character complements both simple and complex dishes. They're excellent roasted whole or halved, where their natural sweetness intensifies under heat. Their robust flavor stands up well to pickling and preservation, and their firm texture means they hold their shape beautifully in slow-cooked dishes like stews and braises. The smaller bulb size also makes them ideal for dishes where whole onions are desired.
Cipollinis are ready to harvest around 120 days after planting, when the tops naturally fall over and begin to dry. Wait for the foliage to brown and die back completely before pulling the bulbs. Once harvested, cure the onions in a warm, dry, well-ventilated space for several weeks, allowing the outer skin to become papery and fully harden. This curing process is crucial for achieving their exceptional storage potential and developing their characteristic brownish-yellow skin.
