The fruit arrives dressed in eye-catching violet and white stripes on smooth, glossy skin that practically glows in sunlight. Growers prize it for sweet, tender flesh that cooks without peeling, making it genuinely easy to prepare. Originally from Spain, this heirloom has earned its reputation as one of the most popular striped eggplants among seed savers and home gardeners, and it thrives in containers as readily as in the ground.
Listada de Gandia shines in any preparation where eggplant is the star. Its tender flesh and natural sweetness make it exceptional roasted, grilled, or sautéed. Because the skin is thin and doesn't require peeling, it's ideal for Mediterranean dishes like caponata, ratatouille, or simply halved and brushed with olive oil for the grill. The variety's mild, sweet character also works beautifully in curry and stir-fry applications where it absorbs surrounding flavors without overwhelming them.
Start seeds indoors 8 to 10 weeks before your last frost date, sowing at a depth of 1/4 inch. Seeds typically sprout in 10 to 15 days in warm conditions. Keep soil warm and moist until germination, then provide bright light to prevent leggy seedlings.
Transplant seedlings outdoors only after all frost danger has passed and nighttime temperatures consistently stay above 50 degrees Fahrenheit. Space plants 18 inches apart. Harden off seedlings gradually over 7 to 10 days before moving them to the garden.
Harvest Listada de Gandia when the skin remains smooth and glossy and the fruit feels firm to the touch, typically 70 to 90 days after transplanting. Pick fruit at about 7 inches long using sharp shears to avoid damaging the plant. Check plants every 2 to 3 days during peak harvest season, as the plant produces continuously in warm weather. Avoid harvesting over-mature fruit, which becomes soft and develops darkened seeds; these older fruits lack the tender quality that makes this variety exceptional.
