This compact carrot variety earns its name through its diminutive stature and concentrated sweetness that intensifies as the small roots mature. Unlike overgrown varieties that lose their best flavor, Bambino maintains its gourmet quality at just 4-5 inches long with very small cores and smooth, deep orange skin. The variety was specifically developed for whole canning and pickling, though many gardeners find the sweet, tender roots irresistible fresh from the garden.
Bambino carrots excel in gourmet applications where their concentrated sweetness and tender texture shine. The variety was specifically developed for canning and pickling whole, taking advantage of its perfect baby carrot proportions and minimal core. These sweet roots are equally prized fresh, whether enjoyed as elegant baby carrots for entertaining or incorporated into dishes where their intense flavor can stand out.
Directly sow 2-3 Bambino carrot seeds 1/4 inch deep and 1-2 inches apart in very loose, well-tilled, and well-drained soil in full sun. Seeds often germinate in 14-21 days in warm soil conditions.
Harvest Bambino carrots when they reach 4-5 inches long for peak gourmet flavor, typically 50-63 days from sowing. The roots should display deep orange color and smooth skin when ready. Since this variety was developed for early harvest, pull them promptly to maintain their concentrated sweetness and tender texture before they become overmature and lose their best flavor.
