The standout feature of Amazing Cauliflower is its incredible adaptability and protective wrapper leaves that eliminate the need for manual blanching. It tolerates both wet and clay soils that challenge other varieties, while producing heavy yields of 10-16 inch heads that can be harvested at baby size or full maturity. The self-blanching nature means brilliant white heads develop naturally without tying leaves, and the variety keeps well in the field for extended harvest periods.
Amazing Cauliflower excels as a nutritious, versatile vegetable rich in vitamin C, vitamin K, and folate. The dense white heads can be steamed and mashed as a low-calorie, low-carb substitute for mashed potatoes, or prepared through traditional cooking methods like roasting, steaming, or incorporating into casseroles and stir-fries. Its excellent field-keeping qualities make it ideal for preserving through pickling or freezing after blanching.
Start seeds indoors 4-6 weeks before transplanting, sowing 1/4 to 1/2 inch deep in quality seed-starting mix. Maintain soil temperature at 65-70°F for optimal germination, which typically occurs in 7-10 days. Keep soil at least 70°F until germination, then maintain at 60°F thereafter.
Transplant seedlings outdoors when they are 4-6 weeks old with 4-5 true leaves, spacing them 18-20 inches apart. Harden plants carefully by gradually increasing cold exposure before transplanting. For spring crops, transplant 2-4 weeks before the last frost, and for fall crops, transplant in June or July after starting seeds in May.
Direct seed from April through June, though not recommended for fall plantings. Sow seeds 1/4 to 1/2 inch deep with 18-20 inch spacing between plants.
Harvest when heads are tight and dense, typically 6-8 inches in diameter, though Amazing Cauliflower can be taken at baby head size or when fully mature at 10-16 inches. Cut with a clean, sharp knife, keeping some protective leaves around the head. Remove heads that have started to open even if undersized, as overmature florets separate and appear ricey with a coarse texture that should be discarded.
