Summer Squash
Dark Star zucchini is the result of years of deliberate plant breeding aimed at capturing the best traits of three exceptional varieties. Farmers Bill Reynolds and Donna Ferguson, working with the Organic Seed Alliance, crossed the hybrid Raven with the time-tested Black Beauty to create Black Eel, then refined that work further to arrive at Dark Star, a variety that delivers open plant growth, genuine drought tolerance, and reliable flavor. Mature plants reach 36 inches in height and width, producing harvestable fruit in just 60 days. This is a zucchini bred by farmers for farmers, prioritizing the qualities that matter most in the garden.

Dark Star represents genuine participatory plant breeding, born from farmers who understood exactly what they wanted in a zucchini and had the patience to create it. The variety combines an open growth habit, which improves air circulation and reduces disease pressure, with drought tolerance that makes it resilient during dry spells. The breeders prioritized flavor alongside these practical virtues, so you're not choosing between productivity and taste. This is a cultivar that proves careful, intentional breeding can solve real problems while keeping food quality at the center.
Dark Star zucchini is grown for fresh harvest and culinary use in the same way other zucchini varieties are, sliced and sautéed, grilled, roasted, added to pasta dishes, or baked into bread. The variety's emphasis on open-habit growth and drought tolerance suggests it's particularly valued by gardeners managing their own farms or market gardens, where these practical traits translate directly to better yields and easier maintenance. The breeders' focus on flavor indicates this is not merely a productive cultivar but one intended for cooks who care about taste.
Dark Star zucchini is ready to harvest approximately 60 days after planting. Pick fruit while it is still tender and before it reaches maximum size, younger zucchini will have better texture and flavor than oversized mature fruit. Regular harvesting encourages the plant to continue producing throughout the season.

“Dark Star's story begins with two farmers, Bill Reynolds and Donna Ferguson, who were searching for a zucchini that would thrive under the conditions they faced: open-habit growth for better air flow, the ability to handle drought stress, and genuine flavor in every bite. Rather than settle for existing varieties, they launched a participatory breeding project with the Organic Seed Alliance. Their journey started by crossing the hybrid Raven with the classic Black Beauty zucchini, which produced Black Eel as an intermediate result. They didn't stop there. Years of continued refinement and selection ultimately led to Dark Star, an exceptional variety that embodied everything they'd been seeking. This is not a variety that happened by accident; it emerged from the deliberate work of farmers who understood their own growing conditions and had the vision to breed something better.”
