This upright Brassica thrives in cool weather, growing to full maturity and continuing to produce tender leaves well into winter, even after hard frosts down to around 20°F. With an impressive nutritional profile and the ability to keep yielding harvests from a single plant for months, it delivers exceptional value to gardeners willing to give it consistent moisture and full sun exposure.

Cold weather doesn't stop Kosmic Kale; it actually improves the flavor, making autumn and early winter the prime growing season. You'll harvest leaves continuously from the bottom up rather than waiting for a single head to mature, meaning a single plant feeds your kitchen for an extended season. The leaves are packed with antioxidants, delivering over 600% of your daily vitamin K in just one cup, making this one of the most nutrient-dense vegetables you can grow at home.
Kosmic Kale shines in fresh applications where its robust texture holds up to massage, toss it raw into salads, blend it into smoothies, or cook it down into chips. The leaves are equally at home in soups and stews, where their slight bitterness becomes mellow and sweet, or sautéed quickly with garlic as a simple side dish.
Begin harvesting Kosmic Kale leaves from the bottom of the plant upward once they reach desired size, even at the tender 'baby' stage. Picking younger leaves actually encourages more harvests from the same plant. Never remove more than one-third of the foliage at a time, and always leave the terminal bud (the growing tip at the plant's center) intact to keep the plant productive. Harvest in cool weather and before conditions turn hot and dry; frost actually sweetens the leaves, so continue harvesting well into winter until temperatures drop to around 20°F.
