Autumn King is a Dutch heirloom carrot bred for cold tolerance and late-season harvests, earning its reputation as the gardener's choice for extending the growing season well into winter. These carrots grow to a substantial 12 inches long with shoulders reaching 2.5 inches wide, developing a sweet, refined flavor that deepens in cool weather. Hardy across zones 2 through 10, they mature in 60 to 69 days from seed and can be left in the ground through hard frosts, making them invaluable for fall and early winter gardens where most other vegetables have faded.

The defining strength of Autumn King lies in its exceptional cold hardiness; unlike most carrots that deteriorate when exposed to freezing temperatures, this variety actually improves in flavor after a frost, as starches convert to sugars. The long, tapering roots reach 12 inches at maturity with a substantial girth, yielding generous harvests from compact garden space. Its ability to overwinter in most climates transforms late autumn from a season of declining harvests into a productive stretch where these carrots remain harvestable even as snow falls.
Autumn King carrots excel in raw preparations where their sweet, crisp texture shines, though they're equally suited to roasting, braising, and long-simmering soups and stews. The substantial size makes them particularly valuable for whole or halved presentations where visual impact matters, and their durability means they store well for winter cooking projects, supporting extended harvests through the coldest months.
Sow Autumn King seeds directly into the garden quarter-inch deep in loose, stone-free soil. Plant as early as spring through July for successive harvests and late-season crops. Seeds germinate best in cool soil and benefit from consistent moisture until seedlings emerge.
Autumn King carrots reach maturity in 60 to 69 days from seeding and can be harvested at any size from baby carrots to full maturity at 12 inches long. For peak sweetness and storage quality, wait until the shoulders reach 2 to 2.5 inches in diameter. The distinctive advantage of this variety is its cold tolerance; leave carrots unharvested in the ground through autumn and into winter, as frost actually enhances their flavor by converting starches to sugars. Simply pull or loosen the soil and lift when needed, even into winter months in most climates.
