Jersey Knight spears are harvested fresh and prepared as a spring vegetable, grilled, steamed, roasted, or blanched for raw preparations. The thick spears hold their texture through cooking, making them suited to high-heat applications like roasting or pan-searing where thinner varieties would become mushy. Once established, a Jersey Knight bed becomes a reliable source of fresh asparagus for nearly three weeks each spring.
